Agree . . . left out the sugar and didn't use bread.
I love copanata, but I leave out the sugar and skip the crusty bread!
The capanata recipe looks delicious and I'll try it soon but I think it is tough to get 10 servings out of 6 cups of arugula and 1 eggplant. It should be easy to reduce the amount of oil used and increase the arugula to at least a cup per serving and then keep it in the same calorie ball park
THIS looks like something i really want to taste! Flavors & nice balance cals/prot/healthy fats! Thanks for posting; i'll have to look up some terms to make sure i know what they mean, (caponata, chiffonade) but that's like Cookin'candy to me!
