This is one of my favorites - I've been making these "Forgotten Cookies" for about 15 years. Like so many have said, there are endless varieties. However, I reduced the sugar to 1/3 c. and they taste just as good!
ooppps! I think I misunderstood the directions. My egg whites were nice and stiff, I added the sugar gradually as I continued to beat the mixture. It fell flat. I now have thin drippy pancake like cookies on cookie sheets in my oven. The foil stuck to them! Starting 2nd batch, do I oil pans?
I love meringues! I usually make mine plain or with a bit of crushed candy cane though. I also like to pipe them in the shape of "kisses" with a pastry bag and sprinkle with colored sugar.
We've made these for years & sometimes added sifted coco powder with the sugar to make Chocolate Forgotten Cookies. Use vanilla or chocolate extract and add mini choc. chips & pecans. They're wonderful all the time except on humid days. They take longer to dry & must be kept in airtight container
I love these cookies. They are easy and definitely help you stay away from fats. I use 1/8 t cream of tartar and 1/8 t of salt. I'll be making these forever!
I substituted xylitol for some of the sugar and did not have good results... =\
my goodness!!!i am 67,my mother made these for us kids,i made them occ. at christmas.have not had recipe for years,it got lost somewhere.i am so happy to see this!!!!!will def. make.they are sooooogood.just plain with color and flavor.also sprinkle on color sugar.
