Nutrition & Calorie Comments  

I used turkey kielbasa and while it cut back on the salt and fat content, I think I prefer regular beef sausage or kielbasa and will use it next time. I also went w/ 3/4 c. of rice and added extra diced tomatoes. All in all, a tasty, easy, filling entree!
I can never leave anything alone! I didn't have any cajun spice nor stewed tomatoes. So i added can of diced chilies,upped it to 3/4 cup rice, added paprika, cayene pepper, salt, and pepper - I enjoyed it!
