Awesome recipe. Instead of 2 cans of Northern beans I used 1 can of Northern beans and 1 can of Black beans. I also added a little cilantro and it tasted just like Tortilla soup without the added calories of tortilla. I love this recipe and I have been sharing it.

This is a great recipe to make in the crock pot. Saute the onions first, add diced chicken to brown. Seasoning - 2 garlic cloves minced, 1 tsp cumin, 1 tsp red pepper, 1 tsp black pepper, 1 tbsp chili powder, and 2 pkgs herb ox sodium free chicken broth. Rinsing veggies cuts the sodium too.
Easy to make, reheats well. Found the spice mix easily in my supermarket. A little high in sodium due to the spice mix, but sodium is not a huge concern for me.
Sounds delicious. However, way to much sodium. I probably wouldn't make unless the sodium was reduced.
I've been making this for awhile (since last year); and I love this dish. It's a simple one-pot meal; we top it with shredded non-fat cheese (1 tbsp) and a dollup or two of low fat sour cream. Yummy!
Fabulous! I used this instead of the seasoning packet:
1 teaspoon freshly ground pepper
1 teaspoon oregano
1 teaspoon ground cumin
1 teaspoon seasoning salt
1 teaspoon cayenne pepper
1 chicken bouillon cube, crushed into powdered form
Allows control of heat and sodium.
