Introduction

Ingredients

    2 cups sugar
    3/4 cup corn syrup
    1 packet unflavored gelatin
    3/4 cup water, divided
    1 t vanilla
    1/4 t salt

Tips

For Valentine's Day, dye 1/3 of the marshmallow "batter," then roll into a tube. Roll the undyed part around the pink, then slice and use a cookie cutter to form hearts.


Directions

Put the gelatin and 1/2 C water in a mixing bowl for an electric mixer. Let sit for 10 minutes. In a heavy sauce pan, combine the sugar and syrup and 1/4 C water, bring to a boil. Boil for 1 minute. Add to gelatin mixture, mix on high for 12 minutes. Add salt after starting mixing. Add vanilla and blend.
Prepare a 9x13 pan with parchment sprayed with pan spray. ALL SIDES. pour marshmallows into pan, smoothing with a spatula that has been sprayed. Let sit overnight. cut into squares - I ended up with 70. whatever you cut with, be sure to keep spraying it, otherwise the marshmallows stick and won't cut. I used a dough blade from our old pizza store. I thought a pizza cutter might work as well, or a large knife. I then dipped them in the melted chocolate. It might work better to drizzle them though...

    Typical misleading marketing - all marshmallows are low fat. Nice recipe but all that sugar can't be ignored "fat-free" notwithstanding. - 1/28/14

    question: how much is "a packet of gelatin" (weight/mass)? The main redeeming value is that I can use my beef gelatin and not worry about sourcing. But it is measured out from a canister, teaspoon tablespoon etc. So it would be nice to clarify weight or measure of the "packet" since I don't buy. thx - 1/28/14
