Introduction

Tangy citrus cake! Tangy citrus cake!
Number of Servings: 18

Ingredients

    1 (18.25 oz) pkg yellow cake mix
    4 egg whites
    1/2 cup unsweetened applesauce
    1 (11 oz) can mandarin oranges in juice
    1 (3.5 oz) box instant vanilla pudding
    1 (20 oz) can crushed pineapple with juice
    1 (12 oz) container fat free whipped topping

Directions

Mix cake mix, eggs, applesauce and oranges.
Beat on high about 6 minutes.
Put in a 9 x 13 pan, very well greased and floured.
Bake 15 minutes at 325 degrees, or until cake is done.
Let cool.
Mix pudding and pineapple with juice, fold in a large tub of whipped topping.
Top cake with this.
NOTES: Refrigerate.

    This was one of the best cakes I have ever had!! The one thing I noticed though was the cooking time....I had to cook it an additional 20 minutes. - 12/19/08

    Fantastic - would never know it was lowfat. The topping would be good to spilt and use only halp on the cake and save to make for another time as a pudding or topping for angel food cake. - 2/5/08

    Very good! Delicious flavor, easy to make. Next time I would only use about 8oz of whipped topping as I had quite a bit leftover with the 12oz container. Highly recommended! - 3/18/07

    I made this cake, but with a box of angel food cake instead of the yellow cake. Unfortunately, I also added the 4 egg whites/applesauce, which is something I wouldn't recommend -- it makes the cake fall & it gets really heavy/dense. All in all, it was absolutely delicious!     BONNYR...Look for fat free topping in the freezer case. Cool Whip is the most well known brand and there is usually a store brand as well.

    Made this cake for a dinner party and it was a big hit. I omitted the frosting and only used Cool Whip Free as a topping. Brings the calories down with 16 servings. Bigger slice for everyone. Will keep in my recipe collection. - 3/26/12

    This is the same recipe I've made for years, but mine was the full fat version. I'm thrilled to find it's low-fat twin. The baking time is normally 30-35 minutes, based on your oven. And, 8 oz. of topping is plenty for a 9 x 13 pan. I used 12 oz. to frost an 8" 2-layer cake. - 10/16/11

    This is a great recipe! The cooking time must be a typo folks. The only thing I do since the cake isn't eaten all at once at our house, is to keep the topping separate and add to the cake as we cut and eat it. Very light and refreshing.. - 4/11/10

    I made this last night and my family really liked it. It is not overly orangy but is moist. I used a smaller can of crushed pineapple in the topping and found it very good. Also, you definitely need to plan to add 20 minutes or more to cook time. I will definitely make this again. Enjoy. - 1/31/10

    Followed the recipe as given and wound up with a cake the thickness and density of a hockey puck. Mandarin oranges disappeared and left no flavor behind - just sweetness, and too much sweetness at that! Poor recipe. Better to follow Betty Crocker's directions and get a lighter, no chol cake. - 7/25/09
