Ingredients

    2 small onions, chopped
    2 cloves garlic, minced
    1 bay leaf
    3 Tbsp. olive oil
    1 medium eggplant, peeled and chopped into 1-inch cubes
    1.5 Tbsp. chopped fresh basil OR 2 tsp. dried basil
    1/2 tsp. dried rosemary
    3/4 tsp. salt
    1 tsp. chopped fresh marjoram, OR 1/2 tsp dried marjoram
    2 summer squash, chopped
    1 green bell pepper, cut into strips
    1 red bell pepper, cut into strips
    2 cups chopped tomatoes
    12 ounces dry pasta, cooked according to package directions
    Optional ingredients (not included in Nutrition Information): sliced black olives, fresh parsley, Parmesan cheese, Mozzarella cheese

Directions

1. Saute onion, garlic and bay leaf in olive oil for 5 minutes.
2. Add eggplant, basil, rosemary, salt and marjoram.
3. Cover and cook over medium heat.
4. Stir occasionally until eggplant is soft, about 15-20 minutes.
5. Add squash, sweet peppers and tomatoes.
6. Simmer 10 minutes until tender.
7. Remove the bay leaf carefully.
8. Serve over hot, prepared pasta.
9. Sprinkle with parsley, black olives, shredded
10. Mozzarella cheese and/or grated Parmesan cheese, if desired.

    I love ratatouilee -- although I drench the sliced eggplant in lots of salt for 20 minutes (remove sharp taste from it) then rinse in cold water before adding to the sauteed onion and garlic and zuccini. Even better the next day. - 7/26/07

    This was an easy recipe! I added mushrooms and used rice in place of pasta. I grilled chicken breasts to go with the dish. My whole family loved it. Great summer meal! - 8/12/07

    This is a great recipe. I do a cooking booth in a grocery store and have made it several times there with rave reviews. I have used canned diced tomatoes with some of the juice drained and it still came out very well. - 7/24/07

    This is a favorite in our house now! I added boiled chicken breast to it and skipped the pasta. I also used zuchini instead of eggplant. All the vegtable's I used were from my Moms garden. Thank you so much for sharing!! - 7/24/07

    Big thumbs up for my French fiance, who is from the South of France, where this recipe comes from. He told me that his mom actually bakes her Ratatouille in the oven, so I'll try that next time. This recipe absolutely needs zucchini - arguably the most important ingredient!- so I added that in. Yum! - 2/6/12

    This recipe was delicious. My guys don't tend to like veggie dishes. I baked a chicken tenderloin for each of them and tossed it with their dish. I could eat this everyday! Thanks - 4/7/08

    I made this with some substitutions, and it turned out great. Since it was all veggies I expected it to be lighter, and it was a little too heavy for a summer evening, for me. But certainly rich and delicious. I expect the leftovers to be even more flavorful. - 8/24/07

    I'm cooking this now & it smells wonderful. However, the picture looks somewhat soupy. Mine is dry & it will take longer than 10 minutes to soften peppers & squash. Any suggestions? I've followed the recipe exactly.

    Very similar to ratatouille I make for DH frequently. I add in courgette (zucchini) too, and green bell pepper.
    It's definitely better with fresh peeled & chopped tomato than with tinned.
    No squash (DH preference), and I add the aubergine (egg plant) last.
