Ingredients

    3 green bell peppers
    I onion chopped
    3/4 cup Minute Rice, brown
    1 can tomato soup plus enough water to make 15 ounces
    1 lb 93% lean ground beef

Directions

Boil green peppers for 5 minutes.
Heat over to 350. Brown ground beef and onion. Add enough water to the soup to make 15 ounces or use 15 ounce can of tomato sauce. Add 1 cup of soup and the rice to the beef and stir.
Take peppers and put in a baking dish. Add the ground beef mixture to the peppers and top with the rest of the soup. Cover and bake for 45 minutes and then uncover and bake for 15 minutes. Makes 6 servings of half a pepper and stuffing each.

    WeI love it- I used ground turkey sausage, garlic and blanched the green peppers in hot water till alittle soft before filing them. Next time, I will add some mushrooms to the filling. - 2/9/09

    Incredible!

    I made this for company and it was a hit!! Looks so time consuming, but very easy to make!! I added chopped garlic used spicy sausage and in the last 15 mins uncovered I put a little fresh parmesan...Yumm - 1/10/08
