Ingredients

    1 cucumber, diced
    2 roma tomatoes, seeded and diced
    1 small onion, chopped
    1/4 avocado, diced
    1 clove garlic, minced
    1/3 cooked quinoa
    1 oz feta cheese, crumbled
    Juice from one lime
    salt to taste

Directions

Chop, mince, dice what needs chopping, mincing and dicing.
Toss with lime juice and salt.
Sprinkle with feta.

    I switched out the cukes for yellow peppers and omitted the cheese (just forgot) and the hubby still ate it all.
