Ingredients

    1 T Olive Oil
    1 Onion, Chopped
    2 Cloves garlic, Minced
    2 Jalapenos, seeded and chopped
    1 C frozen corn
    2 (15 oz) cans black beans, undrained
    1 1/2 C Chicken broth
    1 T Chili Powder
    1 T Cumin
    1-2 C Chunky salsa
    1/2 t Cayenne pepper
    salt and pepper to taste
    1 C shredded Colby Jack Cheese

Directions

Heat oil in soup pot. Sautee onion, garlic, jalapenos, & corn. Add remaining ingredients. Remove 1-2 cups (or more if desired) and blend in blender. Return to pot and let simmer 10 minutes. Top with shredded cheese if desired.

    I really loved this recipe. It was even better the next day. All of the ingredients were easy to find, and most I had already. My son couldn't get enough. I think it is an easy recipe to modify to your taste as well. I left out the jalapeƱo and there was still enough spice and flavor. - 3/15/07
