I have made this many times and the whole family enjoys it. I make it into a one pot meal - I add a vegie mix like carrots, broccoli, etc. - whatever frozen I have on hand and also add some diced ham if I have it. We always use whole wheat pasta and the kids do not seem to notice a difference. - 2/15/09

Ahhh... in days gone by when I used to be able to eat such high amounts of Sodium this would have been HEAVEN! My addition to the recipe (not low fat though) was to add 1 C Sour Cream to the mix to make it even creamier. Oooh-Ahhh! And if you're feeling wild that day, some Rotel isn't bad either. - 2/15/09

This was absolutely perfect! However, upon looking at the nutritional info, I thought it was iffy so I put it into the calculator the same way they did, except input the entire recipe instead of by serving (which is what SparkPeople did) and came out with: 325.7 calories, 6.9 fat and 859.6 sodium. - 11/27/10

I've been making mac 'n' cheese this way forever, but I add a can of condensed cream of mushroom (healthy choice/select) to stretch it farther and lower the per-serving sodium. Use as a side (1/2 serving) to avoid the sodium. Wonderful with salmon patties. Thanks for sharing and reminding me! - 2/2/08

My daughters and nephews love this recipe. We use regular store brand velveeta, and no salt or pepper. We switch between using wheat, white and multi-grain macaroni - depending on the budget.
I actually made this last winter for the first time last winter. Its their fave. Won't let me buy boxed. - 3/14/07
