Ingredients

1 or 2 cans of stewed tomatoes
Green onions ( I used quite a bit but the recipe called for three)
1 large can of beef broth
1 package of Lipton Chicken noodle soup mix
    1 bunch of celery
    2 cans of green beans
    2 lbs of baby carrots
    2 green peppers

Directions

, I used my crock pot but it can be cooked on the stove as well. First, I put all my non-fresh vegetables in the crock pot and turned it on high. Next, I cut the baby carrots in half and put them in a large pot on the stove in enough water to cover them. Boil until soft. While the carrots are boiling, cut up the rest of the vegetables and set aside. When the carrots are finished, add them to the crock pot. Then, boil the rest of the vegetables in the carrot water. When soft, add them to the crockpot as well as some or all of the water (depending on how much of it your crock pot will hold. I let it cook in the crock pot for about two hours so all the flavors run together. Also, I added worstershire sauce, lots of pepper, some salt and other seasonings to taste.

I haven't made this, but I will today 10/10/07. Tomatoes are bad for diabetics in that it raises the blood sugar, but I will put a small amount to taste. I will also add VINNIEBIG suggestion for meat and potatoes. - 10/10/07

    Incredible!
Sorry, but I made a few changes to it. It was already great, but I love meat and potatoes. So, I added 10 oz of ground turkey and 2 chopped up potatoes.
It is fantastic! Still very health and I can eat a ton of it and stay way under my points for the day.
Thanks and I'll keep making it.

This was really good and very filling! I just used one can of green beans and stewed tomatoes and just one lb. of carrots. I did add one new potato, red pepper to spice it up, and thyme. It turned out delicious!! My husband, who is a picky eater, even loved it. I'll make it again! - 9/4/07

I am saving this to my recipe file to try later but I will use low sodium broth, use fresh veggies instead to help cut down on the sodium. It sounds yummy and simple to make, not time consuming. I will use the crockpot method but will add all veggies at once and let cook 8 hrs. - 8/25/07
