Ingredients

    2 c sugar
    1c oil
    23 oz can of pumpkin
    3.5 c whole wheat flour
    2 t salt
    2 t baking soda
    1t baking powder
    1 t nutmeg
    1 t all spice
    1 t cinnamon
    .5 t clove
    2/3 c water

Directions

mix wet then add dry put in two greased and floured oaf pans and bake for 40-60 min at 355 until tooth pick comes out clean. Let sit for ten minutes then remove from pans and cool. I figured calories at 20 servings so about 10 slices a loaf.

I often add 1 c choc chips for the kids but not included in the calories.

    This is a great recipe. To get the calorie count down, I replaced the cup of oil and used one cup of unsweetened applesauce instead. It's just as moist without adding all the extra calories of oil! Great recipe, always a hit with my family and friends. - 11/4/08

    Added flaxmeal and some vanilla extract and used pumpkin pie spice instead of separate cloves/cinnamon and nutmeg. Also made in regular size muffin tins (24 muffins for 30 minutes at 350) - delicious!! - 10/23/08

    I am confused as recipe called for 2 baking pans with 10 slices per pan. That equals 20 servings to me but the nutritional portion stated 43 servings and gave values for 43 servings. Why? - 10/20/11

    I used brown sugar instead of white. Next time will reduce the cloves to 1/4 tsp. Texture is more like cake than bread. Very delicious! - 5/25/08

    I made this recipie but added in some organic chocolate chips. Yum! The only difference is next time I make it I may try a tsp of pure vanilla extract to give it some extra taste. I also exchanged the individual spices for premixed pumpkin spice since that is what I had. I used 3.5 - 11/10/09

    This was moist! I used 1/2 Cup each of agave, molasses, brown sugar and white sugar. I also added 1 tsp. ginger powder, 4 tsp. Vanilla and 2 cups raisins. It was delicious!! Sort of like Gingerbread with a twist. It was even better the 2nd day. Next time I will cut the oil with applesauce. - 11/2/10

    My entire family liked this, even my husband. However, he wanted (when we got home after Easter) to put some icing on his. But we served it just like the recipe called for it to be on Easter and it was a hit and I ate it for breakfast when I hadn't had anything sweet for several days, with milk! - 4/5/10

    Yummy. Makes two loaves, which I love. I freezed one. I bumped the spices up (doubled everything but the cinnamon which I tripled) and it tasted great. But I love these spices with pumpkin. It was very moist. I want to try it with splenda to see if I get similar results. - 11/8/09

    If the calorie count is based on 43 servings/2 loaves then the actual calories per serving is much higher??? Using Brown sugar Splenda may do the trick to get to 127 calories/serving. I love Pumpkin Bread so I'll try it this way & use light olive oil as well. - 2/2/08
