Introduction

Number of Servings: 65

Ingredients

    1/2 cup canned pumpkin
    1/2 cup fat free whipped dessert
    2 servings fat free vanilla pudding
    1/8 tsp cinnamon
    Dash ground cloves
    Dash ground ginger
    65 reduced fat vanilla wafers
    Confectioners sugar for sprinkling (optional)

Directions

Mix pudding, pumpkin and spices.
Fold in whipped topping.
Put mixture in a sandwich bag, and clip the corner.
Put cookies on a cookie tray, and squeeze pumpkin mix onto them.
Chill in refrigerator.
Sprinkle with confectioners sugar before serving if so desired. Enjoy!

    Please mix the pudding FIRST. If you use 1 cup milk to 1 box pudding mix and beat it for a few Extra minutes it will set thicker. Let the pudding set until firm in the fridge, then mix in the cool whip and pumpkin with spices and assemble.

    Sounds good. I've made things like this before, and you DON'T make the pudding first (as you notice, it doesn't call for milk in the recipe). You sprinkle 1/2 a box of DRY pudding mix onto the pumpkin (the "makes 4 servings" size box). That's what keeps it thick enough to pipe on the vanilla wafer - 5/11/10

    So what I get out of everyones comments is that you use 1/2 small box of dry pudding mix, It makes sense that it would set up perfectly that way because the pumpkin replaces the milk as the liquid. Sounds like a winner to me. The directions just needed clarification. Can't wait to try. - 5/12/10

    Have simular idea from Dr. One sugar free fat free instant pudding mix made with 1 3/4 cup of skim milk. 1 small can of pumkin puree anf 1 coll whip. When pudding sets blend all ingredients and your preffered spices and pour into a ready made grahm cracker pie crust - 12/10/09

    Not a winner. Pumpkin mixture didn't firm up at all, even using Snack pack pudding. When put in the freezer to firm up, cookies got soft. I brought most of them home, lined them up in a square dish, put rest of pumpkin mix on top, covered w/ remaining cool whip, and put in freezer, like ice cream - 12/14/08

    These are interesting! They are much better after spending some time in the fridge cuz it's kind of runny. Also, my daughter had the idea of making them vanilla wafer "sandwiches" -- good idea! - 11/23/07

    I made this quite often as a mouse. 2 boxes of sugar free vanilla instant pudding, yes dry, 2cups milk,I use skim, 1 10oz container of cool whip and 1 tsp pumpkin pie spice. and a can of pumpkin, I think it's about 16 oz can. whip everything together and refrigerate. DELICIOUS and low in calories! - 11/25/10

    Awesome recipe. Turned out much better than I expected. Very light, tasty, and easy to make. They were a big hit with my teenage daughter and mom. I am going to make them like banana pudding (minus the bananas) in individual serving cups instead of pumpkin pie for Christmas dinner. - 12/16/09

    Messy & runny, not easy to fill neatly,made pudding 1cup milk; half package pudding mix
    which is 2 servings Left in refrig for 10 minutes After adding the spices to the pumpkin I added the whipped dessert But it was too runny I wondered Put the balance of the dry mix withpumpkin would it set???

    This is delicious. I used 2 pudding "cups' from my grand daughters stash and this is perfect. I added 4 oz of softened cream cheese and eat it as a mousse. - 11/23/14

    The pudding in this recipe should be already made. One serving of pudding...diet or regular....is 1/2 cup. If you purchase the powder mix and it takes 2 cups of milk to make it, then that would be 4 servings. - 11/19/08

    Has anyone tried making this into a pie or torte? Line a springform pan with the cookies, then put the filling on top? Just wondered if you could make a pie that way (and divide it into 10 servings, so each slice would count as 6.5 servings of the mini bites). - 11/19/08

    These are very good!! I used pumpkin pie spice instead of the seperate ingredients. I am anxious to see if they "tighten" up when we put them in the fridge.. but they are yummy!! Thanks, for the big hit! - 11/4/08
