Ingredients

    1 cup Post 100% Bran cereal
    2 cups Kellogg's All-Bran cereal
    1 cup boiling water
    1/2 cup margarine
    1 1/4 cups sugar
    1 eggs, beaten
    2 1/4 cups flour
    2 1/2 tsp. baking soda
    1/2 tsp. salt
    2 cups buttermilk

Directions

Combine Post bran and water. Cream margarine and sugar, and add to bran. Add eggs. Mix dry ingredients, and add alternately with buttermilk, then add Kellogg's All-Bran.

Keep up to 4 weeks in the refrigerator.

Bake in muffin cups at 350 degrees for 25-30 minutes.

Makes about 24 small muffins.

    I liked this recipe. I used Splenda for the sweetener and added 1/2 tsp allspice, 2 Tbsp Splenda Brown Sugar Blend and 1/2 cup mix-ins (cranberries, walnuts, etc.; in whatever ratio you like.) Also,I found that crushing the cereal for the last step made a better tasting muffin that rose more. - 3/4/08

    These are great! Very moist and easy to make. If you don't have buttermilk 1cup milk and a Tbl of vinegar let sit a few minutes works just as good. - 11/21/07

    I absolutely LOVED these muffins! I used whole wheat flour instead of white flour and Honey Bunches of Oats instead of the Post Bran cereal. Agree with other comments that one cup of sugar is plenty...especially with my using Honey Bunches of Oats. - 8/17/10

    OH wow, I can't believe I'm seeing this. I have made these muffins for YEARS. They are the most moist bran muffins I've ever had before. I'm glad to see the nutritien value already done for me. The only difference is I only use 1 cup of sugar and it still tastes just as good. - 1/7/08
