I added diced tomatoes, added lemon juice instead of lime juice, as this is what I had on hand. This was most excellent. I loved it! I have been researching quinoa and how nutritious it is, and had been looking for a recipe to make with it. I will definitely share it with my friends. - 2/20/08

This was fantastic. I reduces the beans and corn (which I cut fresh off two cobs because I had them) and added red belle pepper and recalulated ingredients to about 400 per serving for two servings. I forgot to add the lime juice, but will try that tomorrow for the second half. - 7/3/09

I think cilantro tastes like nasty socks smell, so I refuse to include that, but the rest was good. I added a few drops of chipotle hot sauce - excellent! - 5/10/10

I thought this was very tasty! I added chopped red pepper at the step where the corn and beans were added. I like to mix all together and refrigerate for a few hours before warming up to serve... seems to let the ingredients fuse into each other better. I will definitely make this again. - 4/30/09

Loved this dish, will make it again and again. I made chicken and mixed it in, it reminded me of a Chipotle burrito bowl, but healthier. Loved it! - 5/2/10

Fantastic! The sweetness of the corn is delicious in this recipe. I didn't have black beans, but I think any beans would do. I did one can of chickpeas and one can of chili beans because that's what I had in my cabinet and it was great! - 8/21/11

I made this because there wasn't much left in my house, so I wasn't expecting much. Wow, was I surprised. This is tasty and I never considered going ''Southwest'' with Quinoa before. I added red bell pepper and instead of adding corn, served with fresh corn on the cob. Delish! - 7/30/11

My DH loved this...called it a "big hit". He usually hates couscous. I added a chopped orange green pepper with the beans and used frozen corn. Served it with grilled chicken pieces and greek yogurt - 4/26/11

I made mine with lemon juice (what I had) and it was so good. Lime juice would be best. I got 4 servings from this dish. - 3/22/11

I thought this recipe was fantastic. I am the only one in my house who will eat this kind of thing but I will be gobbling this up until it is done. I do think the calories are off. I did not have the cilantro or the lime but it was still delightful! I will make it again and again - 10/24/10

This was delicious. I didn't use as much cayenne pepper because my husband asked me not to. I would have liked that kick. Can't wait for the leftovers today. - 5/24/10

This was my first time to try quinoa. I liked it a lot and so did my 6 year old. It was a great recipe, very flavorful and really easy. I have made it twice now the second time using chicken. I am going to try turkey sausage in it next time. - 3/21/10
