Ingredients

    1/4 c maple syrup
    2 c sliced strawberries
    1/2 c creamy peanut butter
    8 slices bread
    3 eggs
    2 tbsp 1% milk
    1 tsp vanilla extract

Directions

Preheat the oven to 350 degrees. Coat a baking sheet with butter-flavored cooking spray.

Place the syrup in a medium glass bowl and microwave on high for 30 seconds until simmering. Add the strawberries and set aside.

Spread 2 tablespoons of the peanut butter on each of the 4 bread slices and cover with the remaining 4 slices, making sandwiches.

Beat the eggs, milk, and vanilla extract in a 13" by 9" baking dish. Soak the sandwiches in the egg mixture, turning once. Place on the prepared baking sheet.

Bake for 25 minutes or until browned, turning once. Top with the reserved strawberry mixture.

Serving Size: 4 servings. Each serving is 2 slices.

    SO GOOD!! I used healthy life wheat bread and skim milk because that is what I had. I cut up a banana on top. SO GOOD. I said that already.

    I only made two sandwiches in case I didn't like it. One sandwich with a glass of milk and I was full! I'll eat the second one tomorrow

    I Use egg beaters to save a bit on calories and almond milk, Found a lite bread 35 calorie which works, Of course a sprouted bread is even better. I Use powdered nut butter too.Nice to use fresh berries too-good idea. Love it-great treat. - 1/31/18
