Introduction

A great caramel / coffee glaze that forms over warm sauteed bananas makes for a great tropical treat on it's own or over vanilla yogurt or ice cream. A great caramel / coffee glaze that forms over warm sauteed bananas makes for a great tropical treat on it's own or over vanilla yogurt or ice cream.

Ingredients

    1 tablespoon butter
    2 tsp vanilla extract
    6 tablespoons dark brown sugar
    3 bananas, peeled and cut into 1/2-inch slices
    6 tablespoons brewed espresso

Directions

Melt the butter in a large skillet with the vanilla.
Stir in the brown sugar, and add the banana slices.
Cook over medium-high heat, without stirring, until the bananas begin to sizzle.
Add the coffee and continue to cook until the juices condense to a thick syrup.
Avoid stirring the bananas. Instead, tilt the pan and spoon the sauce over the bananas as they cook.
Serve on it’s own as dessert or over vanilla yogurt or ice cream.

    This was awesome & I'm not much of a sweets person. I tweaked it for my own use, since I didn't have espresso...subbed strong coffee and made the recipe for my family for 4 servings. But absolutely, insanely super on ice cream. KUDOS to you for coming up with this one. - 2/25/08

    Only had 1/2 a serving and although I used reg. coffee, it was great...tomorrow I am going to have some of it in my oatmeal...should be a good treat! - 2/12/08

    I did not like this...the sauce was fine but the texture of the banana was not so good. And I was so excited to try this recipe...oh well. - 4/9/08

    This Was delicious.. I put over low fat vanilla yougurt and it was sooo good :) (I made a smaller portion of the recipe though) - 2/5/08
