Ingredients

    2 cups rinsed, great northern (white) beans
    80 oz chicken broth
    16 oz water
    6 cups fresh spinach leaves
    2 Tbs Cayenne Pepper sauce
    2 cups chopped carrots
    2 cups diced ham
    1 cup diced red onion


Tips

Decrease sodium by using cayenne pepper instead of sauce. As with most soups, the longer it simmers the better the flavor!


Directions

Boil rinsed and sorted beans in water over high heat for 10 minutes. Drain and rinse. Add chicken broth, water, carrots and onion and boil for another 20 minutes over high heat. Add remaining ingredients and simmer 50 minutes or longer.
