Ingredients

2 cups white rice flour
1 cup Splenda or low calorie sweetener
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 large egg
1/4 cup of egg whites or egg substitute
1 1/2 cup mashed bananas
2 4-oz snack cups of Mott's Natural Unsweetened Applesauce (or 1/2 cup unsweetened applesauce)
1/4 cup of walnuts
Tips
You can put about a 1/2 cup of chocolate chips into the mixture as well to make Chocolate Banana Bread.
Freeze individual slices or eat the whole thing fresh in one sitting like I do!!!
Directions
Preheat oven to 350F and grease a 9"x9" baking pan.
Combine dry ingredients in a large bowl, in another bowl combine the egg and egg white, bananas and applesauce.
Fold wet ingredients into dry ingredients. Pour your batter into your greased pan.
Either add walnuts into mixture or sprinkle on top.
Serving Size: Makes 8 Slices

IT was too good, I had to freeze some so we wouldn't eat it all in one sitting. I used Stevia 3 packs of powder and 2 dropper of vanilla cream liquid. 2 whole eggs(as that's all I had) 1/2 tsp cinnamon. I added 3/4 tsp Xanthan gum, and changed the flour to 1 c rice, 1/2 c oat and 1/2 cup sorgum flou - 11/27/12
