Ingredients

    1 pkg Turkey Smoked Sausage or Keilbasa
    1 Chicken Breast, chopped
    1.5 C Onion, chopped
    1 C Green Pepper, chopped
    1 C Red Pepper, chopped
    1.5 C Celery, chopped
    2 Cloves Garlic, chopped
    1 Bay Leaf
    1 tsp Dried Thyme or 2 tsp Fresh
    2 tsp Cajun Seasoning or Emeril's Essence
    1/4 tsp Cayenne Pepper

Directions

Slice turkey sausage and brown in skillet. Add to slow cooker with all other ingredients. Cook on high 2-3 hours or low 3-4 hours. Serve over brown rice.

Makes Four 1 1/2 Cup Servings.

You can add 1/2 - 1 lb raw peeled shrimp in the last 1/2 hour of cooking. Increases servings to 6.

    For a more authentic gumbo add a cup or two of Okra.
    I also add a tspn.of chilpolte pepper for the heat.Chopped caned chipolte in adobe sauce,1 or 2 peppers,is a good addition or 1/2 tspn.red pepper flakes.....Chef Jim.

    This is so FLAVORFUL! Not too spicy and very satisfying. My husband even liked it and he's impossible to please when it comes to food with VEGGIES in it! :) This will be a regular around our house!. - 1/27/09

    This was so delicious! I love Jambalaya, but have always been intimidated a bit, and have never tried making it. This was so easy. My husband and I loved the flavors. Will definitely be making this again :) - 8/31/12

    Yummy! I substituted the chicken with 1# shrimp & used the closest thing to the liquid suggestions that I had which was chicken broth & tomato sauce. Still was awesome! The prep was fairly easy & cooked 3 hours on HI. I will definitely make this again & add canned tomatoes & maybe some okra too. - 11/9/10

    Modified slightly - for spices used only emeril's and a couple pinches of red pepper flakes, added some crushed tomatoes and bit of chicken broth. Husband LOVES this! Deeelish on crisp autumn night. Thanks for sharing the recipe. - 10/9/10

    We love this recipe - it is on our meal planner at least once a month. We leave out the celery since my hubby hates it and we have started doing this on the stove instead of in the slow cooker because it cooked too fast in the slow cooker for us to leave it there for the day while we were gone. - 5/23/10

    i made this today and it came out soooo yummy! i added a yellow bell pepper also. next time i might add more celery. after the cooking process, my veggies shrunk down quite a bit. so next time fore veggies! soooo good! - 10/21/09

    Even though the African word for okra is "gombo" which is where Cajun's derived the name. A gumbo does not require okra for it to be authentic. That is why gumbo file was created. If the gumbo has okra, you do not use file. If it does not have okra, you use the file. Either is authentic. - 10/11/10
