Introduction

This creamy casserole is a healthier take on a classic one-dish meal. This creamy casserole is a healthier take on a classic one-dish meal.
Number of Servings: 4

Ingredients

    2/3 cups boiling water
    2 tbsp. melted butter or margarine
    2 cups herb seasoned stuffing (such as Stove Top)
    3 boneless, skinless chicken breast halves
    1/2 tsp. paprika
    1 can 98% fat-free cream of mushroom soup
    1/3 cup skim milk
    1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes
    1 cup frozen mixed vegetables

Directions

MIX water and butter. Add stuffing. Mix lightly.

SPOON stuffing along center of shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.

ADD frozen mixed vegetables around chicken

MIX soup, milk and parsley. Pour over chicken. Cover.

BAKE at 400 F for 30 minutes or until done.

    I made stuffing from scratch and made chicken gravy (low sodium, low cal) in place of the soups, and water in place of milk. It was great! - 4/10/08

    This was great! Just make sure not to use too much water in the stuffing or too much milk with the soup, or it will be runny. I made another batch, following the directions exactly, and this is definitely one of the best, most filling meals I've had! - 3/19/08

    I cut the chicken in bite size pieces put in on the bottom the next vegetables next the can of soup and then put the stuffing on top. I spiced it up to my liking. I believe kraft has a recipe like this one.
