This recipe is great for a filling lunch on the go! This recipe is great for a filling lunch on the go!
Number of Servings: 1

Ingredients

    1 carrot
    2 mushrooms
    4 cucumber slices
    3 spear broccoli
    4 cherry tomatoes
    1 large whole wheat tortilla
    1 tbsp low fat cream cheese
    1 tbsp fat free ranch salad dressing

Directions

Warm tortilla in microwave for 10 seconds.
Spread cream cheese in center of tortilla.
Cut vegetables into small, bite size portions and place veggies on tortilla.
Drizzle salad dressing over veggies.
Fold tortilla and you're ready to go!
Note: You can substitute the salad dressing or any of the vegetables with your favorite.
Also, if no tortilla's are available, pita bread works just fine!

    I shredded my veggies (easier to eat). I also put all the veggies and dressing together in a baggie and put the wrap together when I was ready for lunch. Easy, versatile and very tasty. - 1/2/10

    OK, breakfast foods just weren't calling me this morning, so I made this. I had a little time, and it's 9 degrees outside, so actually steamed the carrots & broccoli first cause I couldn't face a cold breakfast. That was good too. - 1/2/10

    I strain lowfat yogurt in a covered bowl for about a day in the fridge. The liquid drains off leaving a lovely cream cheese-like texture with the added benefits of yogurt! - 1/3/10

    I shredded the veggies also and put it all in a container and put the wrap together when I was ready for lunch. I brought enough for 2 and was surprised the first one filled me up.
