Ingredients

    3 medium eggs
    2/3 cup white (or whole wheat) flour
    1 tsp salt

    1 cup milk (1%)

Directions

Mix eggs, flour and salt until gooey. Add milk VERY slowly mixing with a whisk as you go.

Heat non-stick pan to med-hi heat, spray with cooking spray. Take 1/3 cup of batter and pour into the pan. Swirl the batter around the pan until the entire bottom is covered with a thin, even layer. (This will be the size of each crepe so choose your pan size accordingly.) Once the sides begin to curl take a spatula and loosen crepe from pan, flip. Each crepe takes a total of 15 seconds to cook if your pan is hot enough.

Once the crepe is done place on a plate with papertowels, cover with another plate or a lid to hold moisture in. Spray pan again before adding the next crepe.

The wonderful thing about Crepes is they can be salty or sweet!! I personally like to add fresh fruit and lite Cool Whip but I have also done chicken and broccoli.

    I used whole wheat pastry flour, skim milk and 1/3 cup of egg substitute instead of all 3 eggs for a saving of about 15 calories per crepe. Thank you for the very good and simple recipe. - 3/18/09

    For a crepe newbie, this is a good recipe. I do think it is a little salty, esp for a dessert/sweet crepe -- and I used Morton Lite salt. - 2/18/15

    Love, love, love this quick and easy recipe! I used it with the wheat flour so It is more dense and made a cooked compote of a golden delicious apple and cinnamon and splenda and cooked till tender. It was awesome!!
    This is a lite recipe that as a diabetic can have. Thx!

    made this for the first time, last night....loved it. added a .5 tsp vanilla essence and a sprinkle of cinnamon powder. Ate it with ricotta, nutella and home made berry spread.     LOVED these!!!!! We had them with 1 tsp of raspberry jam spread over, and a tablespoon or two of Dream Whipped topping. If you close your eyes it reminded you of those Vachon type desserts!
