Ingredients

    1 cup summer squash, sliced
    1 cup zucchini, sliced
    1/4 cup carrots, strips or slices
    5 medium fresh mushrooms
    1/2 tbsp butter
    Seasoned salt

Directions

Cut squash, carrots and mushrooms in thin slices.
Melt butter in skillet; add vegetables and seasoned salt. Cook until slightly browned; turn and cook until underside is browned.

    I have cooked this twice now..one just as is, and the other simply added red onion, used a bit of extra extra virgin oil and did away with the salt..both were great...this is an outstanding way to cook squash..never really thought about doing it that way and is one of my favorites!     I skip the mushrooms, but sometimes add potato or sweet potato. I also sometimes add a couple of egg whites for a yummy veggie scramble - 3/17/09

    I love this recipe as well. I use onions in it instead of carrots and butter pam instead of real butter. It is one of our go to veggies because our whole family will eat it. Thanks - 3/22/07

    This was pretty good, I dont think I added enough season salt though. It was very fast too, Grandma even had some shredded carrots that went in and it was so quick. I would make again. - 4/13/10

    I made this tonight but felt it was a little bland so I added some red onion. I think that helped. I would normally cook something like this with olive oil rather than butter. The butter was okay, but some garlic infused olive oil would have rocked it! - 6/12/14

    I also used olive oil, and I sliced baby carrots into quarters lengthwise. I may not have cooked it long enough, but my husband liked it. I thought it was a bit bland even though I sprinkled some dill on top. I think a little garlic and onion would add some zip. I'll try it again, though. Great idea - 7/25/12
