Introduction

You've never used ramen noodles like this before. You've never used ramen noodles like this before.

Ingredients

    Ingredients for dressing:
    • 3 tablespoons olive oil
    • 3 tablespoon vinegar
    • 2 tablespoon sugar
    • 1/2 ramen noodle seasoning package
    • 1/4 teaspoon pepper
    • 1 tablespoon low sodium soy sauce
    Ingredients for salad:
    • 1 small head red or green cabbage (or 1/2 of each)
    • 2 green onions, chopped
    • 1 carrot, peeled and grated
    • 1 package ramen noodles, crushed

Directions

1. Make dressing by combining ingredients in a large bowl. Stir to dissolve sugar.

2. Combine the first three salad ingredients, toss well. Add crushed ramen noodles and dressing to salad and toss again.

3. Serve right away or cover and refrigerate to allow the flavors to blend.

Serves 6.

    I've made a version of this minus the soup seasoning package. I used Rice Wine Vinegar, and a sugar substitute, added some chopped cooked chicken breast and then added a few drops of seseame oil to the dressing to give it some depth. Its one of my favorite summer salad recipes. - 2/17/09

    I add chopped jicama or waterchestnuts, skip the onion, add raisins and slivered almonds for a topper, plus 1/2 tsp sesame oil.Don't cook the noodles, they soften as you toss. I skip the soy. - 2/17/09

    Most recipes are done to your taste!

    Try using Broccoli Slaw instead of cabbage - just as yummy & comes in pkgs w/shredded carrots &shredded cabbage (along w/the shredded broccoli).

    We add the crunch factor mix (broken up ramen-type noodles, sunflower seeds, sliced almonds) individually.

    I am addicted to this recipe! Its great because you can add so many variations. I usually stir fry a chicken breast in soy sauce and add for a meal- good with toasted almonds or chopped peppers. Instead of the seasoning packet try adding some sesame oil, ginger ,rice vinegar, dash of honey. - 4/20/08

    There are so many versions of this recipe, but all in all, this is a great salad. I use thin pieces of red onion instead of green, great color, and skip the seasoning mix for the dressing....way too much sodium. Also, the sugar substitute for low-cal, I do it all the time!! - 8/21/08

    I make this all of the time with a few slight modifications: I use rice vinegar instead of regular vinegar. I add slivered almonds and toast the almonds and crushed up ramen noodles before adding them to the salad, the toasting adds another layer of flavor and sometimes I add chicken for protein. - 3/26/08

    Very tasty. I'm not a fan of cold noodle salad, so I actually sauteed the cabbage and carrots and cooked the noodles then combined everything, and it made for a great vegetarian dinner dish. - 3/23/09

    You can add shredded carrots for added nutrition and color. In answer to the person who commented that the noodles should be cooked since you don't eat raw pasta - they aren't raw. They're cooked, then dried. It's kind of like eating the chinese noodles you have with chow mein, but not fried. - 3/26/08

    I have made a similiar recipe - but I used the package of cole slaw mix and brown the noodles along with almonds and sesame seeds. I can eat it all day. Do add dressing just a little while before eating so it doesn't get soggy.
    I never thought to add chicken - sounds wonderful.

    I love this salad! I added toasted almonds and sunflower seeds for added crunch. Used Dole classic cole slaw mix and two packs of oriental flavored ramen noodles and both seasoning packs. Always a hit at pot lucks. - 7/29/08

    This is great. I have made this for several years and taken to potlucks. No one can believe the raw ramen noodles can make this so special. Sometimes I use the prepackaged slaw when I am in a hurry. - 3/26/08

    This is good. I omit the soy sauce, add broccoli and cauliflower cut fine, green, yellow, & red peppers. I also use the broiled chicken Raman Noodles, we like the seasoning better. Family favorite. They request it at Christmas and as it has the Christmas colors! - 3/28/09

    many changes one can do with this, brocollie slaw, & nuts, toast up with the noodles, substitutes for lower calories add chicken shrimp crab favorite lean meats. Type of oils & even the packet use 5 Asian spice or add a few red pepper flakes to heat it up I have also used differnt types of noodles - 3/27/09

    I love this recipe. Is is a great crunchy treat. I prep the ingredients (they keep in the refrig at least a week) and add the dressing to serving sizes as I eat them. - 3/27/09

    I've made this recipe lots of time and it's always a hit. The only thing I do differently, is use a sugar substitute like the yellow stuff or the pink stuff and it cuts the calories even more. - 3/26/08

    I use to make this all the time but crushed up the ramen noodles, toast in oven (keep in container) and then sprinkle on top of individual portion to eat-they stay crispy that way! AWESOME! - 4/28/14

    Great salad idea! I'll use the broccoli slaw, cut the sugar, and use seasoned rice vinegar. Toasting the noodles sounds good, will try that the next time I make this! - 3/29/09
