Number of Servings: 4

Ingredients

    1/2 cup fat free Italian Dressing
    1 tbsp Dijon mustard
    1 lb. boneless, skinless chicken breast, cut in chunks
    1 chicken bouillon cube, dissolved in 1-3/4 cup boiling water
    2 cups red and green pepper chopped (about 2 medium)
    2 cups brown quick-cook rice, uncooked

Directions

Mix 1/4 cup of the dressing and the mustard in a large nonstick skillet until blended; heat on medium-high heat. Add chicken; cook 6 min. or until cooked through, stirring occasionally.
Stir in remaining 1/4 cup dressing, bouillon and peppers; cover.
Simmer 2 min. or until heated through.
Stir in rice; cover.
Simmer 5 min. or until rice is tender.
Remove from heat; let stand 5 min. until liquid is absorbed.
Makes 4 servings, 1-1/2 cups each.

    This is great, it's quick, easy, and great tasting. I use CKN Broth instead of bullion, reduced sodium fat free zesty italian dressing, and Kroger brand whole grain boil in bag brown rice (10 min), I also add crookneck squash, zucchini, Aspragus, onion, red orange & yellow bell peppers and mushrooms - 3/10/10

    Awesome flavor. Doubled the recipe to use for another dinner and only used 1 cube. Plenty. Might even try w/out next time as perhaps the dressing has enough salt. Chicken was tender. Used frozen pepper strips, thawed, for ease. Will definitely make this one again. - 1/1/09

    I will be trying this again with ingredients closer to what is listed. I didn't have the low-fat Italian dressing, so mine was a little greasy. Plus, it was not the zesty dressing. Also, I didn't have dijon, so I looked up a recipe and ended up substituting powdered mustard and some vinegar. - 1/10/10

    Yum, I made a slightly altered version, cooked rice, layered
    on the cooked chicken. I thickened the dressing so it was like a sauce put on top and baked to set and heat through. Thanks for the inspiration.

    I made it and it looked kind-of blah, so I lined plates with lettuce and tomato wedges and served rice on top of it for some veggies and a nicer presentation. It looked too much like packaged rice mix. I will add some black beans next time. - 5/18/08

    I really liked this one, but my family didn't care for it. I adapted this a little to make it like a primavera with Brown Rice Noodles and used zucchini, summer squash, baby bella's and cherry tomatoes. This went over much better with the family. - 3/27/10

    I loved this recipe but my husband thought it was missing something. I added onion, Italian seasoning, 1 tsp of mustard since I didn't have honey mustard, no bullion and regular brown rice in the end (not instant). Next time adding red pepper, oregano, etc. to make it more flavorful for the husband. - 3/23/10

    my family liked it better than I did. However I changed it to a vegetarian style, using quorn brand fake chick'n and I used a veggie bouillon instead of my veggie chick'n broth. I think it was the bouillon that kept me from really liking it. I'll give it one more shot with the right flavoring! - 3/13/09
