Introduction

Filling low-carb, high-protein meal! Filling low-carb, high-protein meal!
Number of Servings: 12

Ingredients

    2 cups fresh turkey breast meat - cubed
    9 medium eggs, whites/yolks separated
    9 tbsp white flour (whole wheat flour can be substituted)
    9 tbsp margarine
    1 tsp black pepper
    1 tsp salt

Directions

Melt margarine in at least a 2 qt saucepan and slowly add flour, stirring constantly until mixture is creamy.
Turn off stove.
Slowly add egg yolks and whites continue stirring as the mixture cools slightly.
Stir in cubed turkey breast meat until thoroughly mixed. Pour mixture into a greased 4-6 qt. baking dish.
Bake uncovered at 350° for 45 minutes, or until the top is slightly browned and/or a knife comes out clean from the center of the souffle.
Makes approximately 10 servings.
**Recipe can be divided into thirds for smaller serving needs.

    I put my turkey, mixed with some lobster paste, into bottom of casserole, and the rest of ingredients, mixed the same way as in recipe,over top. Its a big pouffy souffle with its own sauce. Invert onto platter or serve directly from dish. - 2/28/09
