Introduction

An old favorite made lo-cal and lo-fat! An old favorite made lo-cal and lo-fat!
Number of Servings: 6

Ingredients

    2 boneless skinless chicken breast
    1 can lo-fat cr chicken soup
    1 can lo-fat cream mushroom soup
    1 can Rotel tomato
    1 9.5 oz bag baked tortilla chips
    1.5 cup 2% cheddar cheese

Directions

Put 2 chicken breast on low in a slow cooker to cook 5-6 hours. When chicken is done, shred. In a large mixing bowl, add all ingredients,and stir together, except cheese. In a casserole dish, pour mixture. Cook at 350' for 30 minutes. Top with cheddar cheese. Makes 6 servings.

    Very Good
    This was great! I deleted the can of Cream of Chicken soup and added a can of Dark red kidney beans with the juice. This lowered the fat even more and added protein and fiber. Then we topped it with Salsa and shredded lettuce. Delicious! - 1/26/11

    This is pretty good. It actually got better the more I ate it. I added some fresh chips to my bowl to make it a little more crunchy. The others in the mix got nice and mushy. I recommend baking this in an 8X8 pan as the 9X13 was too big. - 7/17/10

    Really good, my husband and I both enjoyed it. I added a little chili powder and garlic powder for some extra flavor, but I think it would have been just as good without it. We had leftovers which we heated up the next day and stuffed in some taco shells, delicious! - 3/20/08
