    6 chicken breasts
    2 cups salsa
    1 can yellow corn
    1 can black beans

Directions

Add all ingredients to crockpot and cook on low for 6 hours. Serve with tortillas or rice.

    I added a packet of taco seasoning mix to give it a flavor "boost". Or you can add 1 TBSP of chili powder and 1 tsp of cumin to achieve similar flavor. - 7/18/09

    I've made this recipe many times also and I find that if you use the frozen chicken on the bone, the chicken doesn't dry out. It's so good! - 4/29/09

    was good. Next time I think I will add rotel instead of salsa and maybe some taco seasoning. I ate it over lettuce like a taco salad. Will definitely make again. Thanks for posting this. - 2/11/10

    I loved it! I'm on a low/no carb diet so I added the taco seasoning and a little more salsa and placed the finished product on a bed of spinach & boiled okras... then sprinkled some craisins on top. This was absolutely delicious, incredibly easy and filling!!! :) - 4/17/11

    Wow, so easy!! This is one you can play with and add different things each time. I got some good ideas from the other comments. I used Rotel tomatoes and some hot salsa; I added Birdseye Steamfresh brown rice 3 hours before it was done. - 11/30/09

    This is good and filling. I cut the chicken in cubes and used homemade salsa. I didn't have a crockpot so i cooked it in a heavy pan with the lid on. After about 30 mins, it looked more like soup so i added some brown rice. Turned out very good. Adding the rice made it a good heavy meal. - 5/9/11

    Very good! I added one more can of black beans so I could make it for a few more people. Next time I will probably add a little more salsa as well. But the flavor of the chicken was delicious! Everyone loved it! - 9/24/10

    Love this! I add an 8oz block of reduced fat cream cheese. I cube and add about 1/2 hr before we eat, just enough time for it to melt.
    My kids also love this! It's awesome with crushed Doritos, even as a cold dip with Doritos. Also awesome over baked potatoes.

    The best thing about this recipe is that my daughter (who almost never cooks) and her hubby and kids really liked it so much, she said she'll do it!! I did a lower salt version with no salt added corn and low sodium black beans. I replaced some of the salsa with no salt tomatoes-cumin-chili. Yum. - 2/3/13
