Make sure each breast is around 3 oz. Otherwise the count is way off. Many breasts are 4.5 oz and that's 130 calories alone.
Love this! I add an 8oz block of reduced fat cream cheese. I cube and add about 1/2 hr before we eat, just enough time for it to melt.
My kids also love this! It's awesome with crushed Doritos, even as a cold dip with Doritos. Also awesome over baked potatoes.
The best thing about this recipe is that my daughter (who almost never cooks) and her hubby and kids really liked it so much, she said she'll do it!! I did a lower salt version with no salt added corn and low sodium black beans. I replaced some of the salsa with no salt tomatoes-cumin-chili. Yum.
I loved it! I'm on a low/no carb diet so I added the taco seasoning and a little more salsa and placed the finished product on a bed of spinach & boiled okras... then sprinkled some craisins on top. This was absolutely delicious, incredibly easy and filling!!! :)
I made this recipe for dinner and my husband and I both enjoyed it. We served it over rice; and added sliced black olives, reduced fat shredded cheese, and light sour cream. I will definitely make it again!
Very good! My kids liked it. I served it with whole wheat tortillia, fat free sour cream and shredded cheese. Very good.
Skip the corn - less fattening.
