Ingredients

20 oz Ground turkey, Italian seasoned (Jennie-O brand works well)
1.5 cups chopped yellow onion
4 cloves chopped garlic
2 chopped green bell pepper
4 cups beef broth
3 cups water
3/4 cup red wine (merlot works well)
4 cans of diced tomatoes (14.5 oz)
2 cups thinly sliced baby carrots
3 TB dried basil
1 TB dried Italian seasoning
5 medium"baby zucchini"
1/2 cup shopped fresh parsley
20 oz cheese-filled tortellini
Directions
In a GIANT soup pot (at least 2+ gallons):
1) Brown ground turkey, place turkey in colander and rinse with hot water to remove excess grease. Drain most of grease, leaving just enough to coat bottom of pot
2) Saute onions, garlic & bell peppers until onions are tender.
3) Add in: broth, water, wine, tomatoes (with juice), carrots, basil & Italian seasoning, & sausage.
4) Bring to a low boil, then simmer uncovered for 20 min.
5) Add Zucchini, parsley and tortellini. Simmer 25 minutes, or until tortellini is tender
6) If too thick, add 1+ cup of water/broth
7) (optional) Serve sprinkled with Parmesan (not added to calorie count)
