Ingredients

    1 clove garlic, minced
    1 lb. ground chicken
    1 cup onion, diced
    1/4 cup green pepper, diced
    6 whole-wheat hamburger buns
    2 cups instant or pre-cooked brown rice
    1/2 Tbsp. olive oil
    1/2 tsp. salt
    1/2 tsp. pepper
    3/4 cup ketchup
    2 Tbsp. brown sugar
    1 tsp. Worcestershire Sauce
    1 tsp. mustard
    1 tsp. white vinegar
    1/4 cup water

Directions

Prepare rice according to package directions.
While the rice is cooking, begin making the sloppy joes.
In a large skillet, heat the oil over medium heat and add the chicken. Stir to separate the meat and then add the onions, peppers, garlic, salt and pepper. Continue cooking until the meat is cooked and the onions are translucent, about 5 minutes.
In a measuring cup or small bowl, combine the ketchup, brown sugar, Worcestershire sauce, mustard, vinegar and ¼ cup water.
Once the rice is cooked, drain and add to the skillet. Add the liquid ingredients into the meat and rice mixture and stir well to combine all the ingredients. Continue to simmer for about 5 minutes to meld the flavors.
Serve between whole-wheat buns.

    Made this the other night and it was delicious! Husband wasn't too sure about chicken & rice on a bun but even he admitted it was very good. The rice taste seems to disappear and it just tastes like sloppy joe. Will definitely make again. - 1/7/14

    This is surprisingly good. The mixture is thicker than most sloppy joes so we put it on sandwich thins. We also left out the salt and it didn't taste bland. - 2/25/14

    Will make this and serve w. some green veggies instead of on a bun. I will also cut out half the rice so that it's not so carb heavy. I'm sure it will taste great on a night when you want something a little different. :) - 3/21/14

    Loved the idea of a lighter, healthier sloppy joe, and the overall flavor was surprisingly good. But this recipe seemed to call for WAY too much rice, which ended up overwhelming the chicken and everything else. Will try cutting back on the rice next time for a slightly meatier, saucier taste. - 3/3/14
