Ingredients

    12 eggs
    8oz parmesan cheese
    12 slices of turkey bacon cooked & crumbled
    2 packages of frozen spinach

Directions

Whip everything together and put in 9"X12" pan that has been sprayed with olive oil pam. Bake in 400 deg. oven for 25-30 min. Cool and cut into 12 servings. I put them into zip-loc bags and reheat in the microwave for a quick breakfast.

    O.K.
    too much spinach, not enough egg. I used reduced-fat feta instead. Wish I would have drained the frozen spinach better - left the dish VERY watery. - 10/24/11

    I made this items many times, however I substitute the 12 eggs with egg beaters instead and I add mushrooms and onions to mines and a little hot sauce. I absolutely love it. YUMMMMMMM - 9/2/08

    This recipe is very simple and quite tasty. I cut the 12 eggs out and used egg beaters to lower the cholesterol and fat. I freeze the servings and take them to work for breakfast. Bye bye high carb breakfast. Thanks for the great versatile recipe! - 8/27/07
