too much spinach, not enough egg. I used reduced-fat feta instead. Wish I would have drained the frozen spinach better - left the dish VERY watery.
This recipe is very simple and quite tasty. I cut the 12 eggs out and used egg beaters to lower the cholesterol and fat. I freeze the servings and take them to work for breakfast. Bye bye high carb breakfast. Thanks for the great versatile recipe!
