Ingredients

16 oz pork tenderloin, lean
0.5 tsp salt
0.4 tsp pepper
0.5 tsp chili powder
0.5 tsp ground cumin
0.5 tsp cinnamon
2 tsp olive oil
0.25 c brown sugar packed
0.5 T fresh garlic, finely chopped
0.5 T Tabasco sauce
Directions
1. Preheat oven to 350 degrees.
2. Stir together salt, pepper, cumin, chili powder, and cinnamon, then coat pork with the spice rub.
3. Heat 1 T oil in a 12-inch skillet over moderately high heat and brown pork, turning about 4 minutes
4. Stir together brown sugar, garlic and Tabasco and pat onto top of tenderloin. Place pork in roasting pan and cook in the oven for 20 minutes.

This is a FABULOUS P90X recipe. We had it last night for the first time and the pork flavor was incredible!! I cooked it in a pyrex baking dish in the oven for 1 hour covered in foil. When I pulled it out, I sliced the meat in the pyrex dish and let the slices soak up some of the juice. YUMMY! - 4/25/08

I made this recipe for my husband tonight it was really good. I cooked it for 1 hour at 350 covered it with foil and it turned out great really juicy and I loved the Tabasco because it gave it that spicy and sweet taste with the brown sugar. I am not much of a cook and it was really easy even for me - 6/11/20

Made this delicious recipe tonight. I used a pork shoulder picnic roast instead, because we are a family of 7. The flavor was different, and superb. Excellent texture, very moist. I had to increase the amount of seasoning. Served with brown rice and String beans, with onions, red peppers and garlic. - 8/6/13

This was Phenomenal! Loved it! Added a little more spice and Scriacha hot sauce since I didn't have tobasco. Also, the only pineapple in the house was a small can of crushed in own juice. I added that to the roasting pan and baked (after browning) for 35 min. Should have baked for only 20 min. - 8/11/12

AWESOME! I jazzed it up by doubleing the chili,cumin and cinnamon!I baked a peeled/slice apple with it for 15 minutes then added real fresh pineapple slices for the last 15 minutes. ThenI made rice with kiwi, strawberries,the baked pineapple&apples,green onions and cilantro with it. OMG!I loved it!! - 4/29/12

great flavor, I would make this again if my Hubby was not against it. He said it reminded him too much of French toast. So I may try it again without the cinnamon just so I can have it once more.
