Introduction

Really yummy!! Really yummy!!
Number of Servings: 8

Ingredients

    2T olive oil
    1 medium onion finely chopped
    1T Splenda
    1T whole wheat flour
    1 14.5 can low-sodium chicken broth
    2 28oz cans crushed tomato
    1C fat free half and half
    4T fresh basil or equivalent dried or basil paste
    Salt, pepper, cayenne pepper (optional) to taste

    Optional: Add whole grain croutons or low fat mozzarella (not included in nutritional count)

Directions

Makes 8 servings:

Heat oil in a 4qt saucepan.
Add onions and Splenda and cook gently until onions are soft.
Add flour and cook for one minute stirring constantly..
Slowly pour in broth scraping brown bits from the bottom.
Stir in tomatoes and basil
Bring to a boil, lower heat, and simmer for 15 minutes.
Puree in small batches in food processor or blender. Return to pot
Add FF half and half, salt, pepper and cayenne pepper and heat through.

**if you like it chunky use chunky crushed tomatoes and skip puree process.

    Thank you so much for this recipe!! I used regular granulated sugar, homemade canned tomatoes, and my own chicken broth (none of which altered the total calories) and it was fantastic! I have been searching for the perfect tomato bisque & here it is. No more unfulfilled pregnancy cravings!! - 1/18/09

    Very Good
    This was my first try at a tomato soup. This soup was good and easy to make.
    I omitted the splenda after readying some of the reviews.
    I think I will use this soup as a base for other sauces.

    not much flavor. I had to doctor it up with some onion powder, basil, nutmeg garlic salt.

    Good
    This was good. But I tend to like tomatoes with Italian spices and found that this made a tomato soup that was on the sweet side - though I did discover that I left out the sugar - that could have been part of it.

    I added: oregano, garlic, and anise seed. Yum!
