Introduction

A delicious Caribbean favorite that is cholesterol free and made with very little added fat. A delicious Caribbean favorite that is cholesterol free and made with very little added fat.

Ingredients

    • 1 lb. dry black beans
    • 7 cups water
    • 1 medium green pepper, coarsely chopped
    • 1-1/2 cups chopped onion
    • 1 tablespoon olive oil
    • 2 bay leaves
    • 1 clove garlic, minced
    • 1/2 teaspoon salt
    • 1 tablespoon vinegar (or lemon juice)
    • 6 cups rice, cooked in unsalted water
    • 1 jar (4 oz.) sliced pimento, drained
    • 1 lemon cut into wedges

Directions

1. Pick through beans to remove bad beans. Soak beans overnight in cold water. Drain and rinse.



2. In large soup pot or dutch oven stir together beans, water, green pepper, onion, oil, bay leaves, garlic, and salt. Cover and boil 1 hour.



3. Reduce heat and simmer, covered, 3-4 hours or until beans are very tender. Stir occasionally and add water if needed.



4. Remove about 1/3 of the beans, mash and return to pot. Stir and heat through.



5. Remove bay leaves and stir in vinegar or lemon juice when ready to serve.



6. Serve over rice. Garnish with sliced pimento and lemon wedges.



Yield: 6 Servings

    I like this recipe too. I love rice & beans. I do it at least twice a month. But what I do is I blend, green or red peppers, onions, cilantro, garlic & vinager. Store this condiment in a jar, it never goes bad and you can use it with any other meal. It gives the black bean juice such a good flavor. - 9/10/08

    I do a variation of this with brown rice. I add tomatoes, a little tomato juice, green chilis, cumin, garlic and lime juice. We just love it. - 6/6/08

    My usual black bean recipe adds bulk sausage, cumin, cayenne, cilantro, lime juice rather than vinegar or lemon, black pepper, and a tiny pinch of cloves...also chicken or vegetable stock rather than plain water. - 2/8/08

    Great recipe!!! But I would try it with some yellow rice. There are so many healthy ways, you can make yellow rice. Store bought has too much sodium. - 2/8/08

    A good base, very filling. A lot of satisfaction per calorie. However, "Caribbean" did not come to mind, it was very bland and there are no spices to speak of in this recipe. Some additional sea salt at the table perked it up though, and next time I will add spices to the beans during cooking. - 9/12/07

    Note that the calorie count is for a whole cup of rice PLUS 1/6 of the beans. That's a much larger helping than I would normally serve per person. That said, beans & rice are one of the most nutritious, satisfying foods around. Try cumin, cayenne, tarragon for flavor. - 2/8/08

    This is very similar to a Cuban Black Beans and Rice dish that I make. Mine uses 10 cups of water and has some other ingredients. The black beans freeze beautifully. - 2/27/11

    i'm cuban and i grew up eating this dish, when you add vinigar add alittle sugar and also add about 4 tablespoons of tomato sauce, makes a big difference, real garlic is also better, hope this helps anyone - 2/8/11

    so it says 6 cups of rice, so you have one cup of rice and 1/6 of the beans is aserving. If you look that up the calories are correct. You can reduce the amount of rice if you want less calories - 6/6/08

    This is a very good meal in itself. I have read that rice & beans combined, makes a complete protein. Being partiallyl vegetarian, having food like this is very important. - 6/6/08

    We are used to eating beans and rice indian style but like to try many different ways. I agree with the others about spicing it up. However, I also know to each his own and what I may like the next person may not. My daughter and I love spicy foods so for us...I say more spice.Enjoyed your recipe!! - 4/21/08

    When I make beans similar to these, I add quite a bit of salsa (vinegar and pimiento) and some cumin. When serving, I plop in a tbsp of low fat or non fat sour cream. - 3/8/08

    Thanx! Looking forward to trying this. Love Caribbean & Mediteranean dishes lately. Question the Nutrition values though. Like aforementioned, there is no way I could eat a cup of rice OR a lb of beans!
