A hearty, flavorful soup with a kick! A hearty, flavorful soup with a kick!
Number of Servings: 6

Ingredients

    1 lb. italian chicken sausage, hot
    1 C. chopped onions
    5 cloves garlic, roughly chopped
    1 Tbsp. fennel seed
    1 tsp. crushed red pepper
    1/4 tsp. cayenne (optional)
    6 C. low sodium chicken broth
    8 oz. fresh, chopped kale
    2 15oz. cans cannelini beans, drained and rinsed
    1 C. evaporated skim milk

Directions

Remove sausage from casings and sautee over medium with onions in olive oil until sausage is cooked through. Add garlic, fennel, red pepper and cayenne (if using). Cook 1 minute. Add broth and bring to a simmer. Add kale and cook 20 - 30 minutes, until kale is done to likeness. Add beans and milk, heat through and serve.

    Fixed this tonight - it was so quick!We love this soup! I had to make a few substitutions due to ingredients on hand - I used chicken sausage, bok choy and yogurt instead of evo. milk a Also I ground the fennel seeds. The fennel and cayenne were a great combo. Did not add the crushed red pepper. - 5/11/09

    Yummy and perfect for a chilly Sunday. Super easy, but full of flavor. It was a little too spicy for my 10yr old, but she ate the whole cup. I doubled the recipe, but kept the hot spices the same. - 2/17/13

    I would have given this recipe a 5, but it is far too spicy for our taste! Next time, I'll go with the spicy sausage and leave out the red pepper flakes and cayenne pepper. - 9/16/12

    Delicious, thanks so much! I couldn't find chicken Italian sausage, so I combined 1lb ground chicken with a few cloves of garlic, 1t. salt, and 1/4t. each red pepper flakes, dried basil, oregano, fennel seed, black pepper, and 1/8t. dried rosemary. Homemade chicken sausage :). - 11/9/11
