Ingredients

    2 large baby zucchini halved lengthwise
    2 oz reduced fat shredded cheese - I used a 4 cheese mexican blend
    1/4 medium red bell pepper
    1/4 medium red or sweet variety onion
    1 clove garlic
    1 tsp chili powder
    1 tbsp Parsley (I used dried but fresh would be even better)
    Salt and Pepper to taste

Directions

Hollow out centers of zucchini halves and reserve.
Using small food chopper, finely chop zucchini guts, bell pepper, onion and garlic (add parsley, too, if using fresh).
Add the chili powder, parsley, salt and pepper and any other seasoning you might like to the chopped veggie mix.
Add one half the cheese to the mixture and combine well.
Spoon into zucchini halves and spread rest of cheese on top.
Bake at 400 degrees for approximately 30 minutes - cheese should be golden brown.
Makes 2 servings - two halves per person.

    This recipe was a little bland for me and my husband. It was easy to make and looked delicious but I would add more spices next time (red pepper, cajun seasoning, etc.) and try some different cheese (I used cheddar) to give it more taste. Overall it was good and will make it again with modifications - 5/27/09

    This is the BEST!!! My 16 year old son loved these. He wanted more cheese, so I added more on top of his. I did make these and will make again. I think for a winter dish I will put in a baking pan and put some tomato sauce over it and then bake. Again - WONDERFUL & filling - 6/15/08

    This is great as is or is easily tweeked to your liking. I once made it using Italian seasoning instead of the chilie powder and pouring 1/2 can chopped tomatoes on top before baking. It was good too. - 11/12/08

    Made this tonight for me and my fiance - we both really enjoyed it. I added an extra ounce of the cheese for both of us. I don't have a food processor, but I chopped everything up by hand and it was just fine.

    This recipe still lets the zucchini taste like zucchini but is different than just plain boiled squash. Nice change for an everyday meal or company. - 3/27/09

    This was an OK version. I add ,mushrooms(fresh or canned), black olives and ground turkey ,and then grate a drier saltier cheese on top(parm/pecorino/romano), and sometimes breadcrumbs for a little crunch. Kick it up a notch people! - 9/14/09

    My son(14) loved it. Added some fresh chopped mushrooms to it and some cumin and made it with jack cheese. You could add Italian seasoning and mozzarella or any other combinations that your family likes. This is awesome for using up whatever happens to be in teh refrigerator. - 9/12/09

    This sounds really good. I love zucchini. For a kid friendly version you can mix chopped up ham, crushed pineapple, pizza sauce, and mozzerella cheese. It's like a ham and pineapple pizza, but with a veggie twist. - 11/12/08

    I love zucchini and make something similar. If I don't have cheese, I just put plain, low fat yoghurt on top. Gives a nice tang. - 11/12/08

    My mom used to make this for my family when I was a kid (and she couldn't remember what was inside), but thank you for posting this recipe!! She did have a few other "italian" spices and bread crumbs or crushed corn flakes for a little more substance, and parmesan cheese as well mixed with the veg! - 9/19/11

    I'm not a very experienced cook, so I found this time consuming to make. Not a bad thing if I start in advanced. I think next time I'll switch the chili powder for taco seasoning mix, the powder over powers the taste. I stuffed half of the pepper with leftover veggie mix. - 1/31/11
