Ingredients

    Cod Fillets, 24 oz
    Olive Oil, 1 tbsp
    Garlic, 2 cloves
    Carrots, raw, 1 cup, grated
    Zucchini, 1 cup, grated
    Sea Salt, 0.25 tsp
    Pepper

Directions

Preheat oven to 450 degrees.

On top of the heavy duty aluminum foil, lay cod fillets. (You will be making a 'packet' from the foil, so be sure that there is enough foil to wrap over the top and come up around the sides.)

Rub olive oil and garlic on the fillets. Sprinkle with salt and ground pepper. Put grated vegetables on top of the fish and wrap each fillet into a packet.

Bake for 20-25 minutes, checking at 15 for doneness. When fish is done, it will flake easily with a fork. Unwrap each packet and serve. Juices in the bottom of the packet can be used to drizzle over pasta, rice or other vegetables.

I never had cod before and this was really good. I used asparagus instead of zuccini. - 9/27/08

my husband doesnt like "fish" but I made this and he loved it. Only thing is I put it in the oven in a baking dish with rice under it and baked it altogether for the time suggested. Also sprinkled lemon pepper and garlic on top. Very very good. - 1/28/11

This was good. I used just carrots for the veggies. The cod didn't have too much taste. But I liked it. Put some lemon juice on it after I baked it. I think I will use lemon juice before I bake it next time. I would make this again. - 5/4/10

Per the Dr. I have to avoid all sugars for at least a month, so I did not add the carrots. I did grate some red onion on top of the zucchini, but forgot the garlic! I had it with a cup of brown Basmati rice and it was pretty darn good. - 5/8/10

I liked the juices off the fish went very well over noodles. Not really sure if the fish had enough flavor though. But will make again - 9/17/09

My husband really liked this but I wasn't so sure. My slice of fish was thinner than his so it ended up over coked. There was also a funny smell when I opened the package, something about the mix of ingredients. Felt healthy after eating it though and was perfect balance with baked sweet potato. - 8/31/09

This was my first time ever, making fish. I am to eat more of it, per my doctor. I was really nervous that I would mess this up, or that I wouldn't like it (I'm not a big fan of fish). IT was actually really easy, pretty, and tasty in a mild way. I'll definitely make this again! - 2/26/08

I haven't made this yet, but I'm planning on trying it tonight...the only problem is that the recipe doesn't include at what temperature you should set your oven at. - 2/15/08
