Ingredients

    2 large eggs, lightly beaten
    coarse salt and ground pepper
    1 teaspoon olive oil
    1 cup packed baby spinach
    1/4 cup 1% lowfat cottage cheese
    2 tablespoons parmesan cheese

Directions

In medium bowl, whisk egg whites and 1 TBSP water. Season with salt and pepper. Set aside.

In medium non stick skillet, heat oil over medium high heat. Add spinach,season with salt and pepper. Cook until wilted and tender, about 1 minute. Add egg whites, cook until nearly set. Using a flexible spatula to pull sides of omelet toward center as uncooked egg white run underneath, 1 -2 minutes.

Dollop cottage cheese on top of omelet, sprinkle with parmesan cheese, season with salt and pepper if desired. Gently side omelet onto serving plate folding over on itself by tipping skillet slightly.

    I used fat free cottage cheese, egg white sub (1/2 cup) and subed the Olive Oil for Pam spray and it reduced the calories by almost half . That way I was able to add 1/4 avocado and green onions. Next time I will throw in some tomatoes an mushrooms. Great recipe! The omelette was huge an filling! - 11/2/12

    This was really the first egg white omelet I've ever actually liked. Very flavorful and satisfying! Used 1/3 cup of egg beaters egg whites (-94 calories) and 4% milk fat cottage cheese (+14 calories). Added pepper but no salt. Great recipe! - 3/15/13

    I was also confused on the egg white or eggs question so I made it with eggbeaters (original kind). Also switched to low fat feta cheese because my cottage cheese was expired (oops!) Very yummy ~ husband also liked it. Recipe calculator for this version 276 cals., 16.2g fat, 3.6g carbs., 29.4 prot. - 6/24/12

    Must say surprised. I thought just by the look of cottage cheese on this I would not like it. Plus I had made a quiche awhile back and the spinach overwhelmed the whole dish. I must say I was pleastanly surprised. I LOVE THIS DISH! I will make this again definitely. Thank you! I Left out the salt. - 7/21/11

    use Daisy 2 % cottage cheese and usually egg whites or one egg and one egg white. I skip the olive oil and maybe use a spray of olive oil in pan. Like addition feta,and green onions someone mentioned, artichoke hearts are good too and some fines Herbs. Nice omelet, thank you - 3/27/17

    you say eggs lightly beaten then only seem to use the egg whites what do you do with the yolks ? I just do not throw food away I know there is more fat in the yolks but I cannot eat parmesanso can I add the yolks instead? - 4/23/12
