Introduction

I have yet to find a full fat version of coconut cake that I like better than this low fat version! I have yet to find a full fat version of coconut cake that I like better than this low fat version!
Number of Servings: 12

Ingredients

    1 box, Duncan Hines Coconut Supreme Cake Mix
    1 can Sprite Zero (or a little more is ok, if you happen to have a 20 oz bottle. Just increase the bake time)
    1 tub Cool Whip Free, the average size, not the big one
    .5 tsp Coconut Extract
    1-4 serving pkg of Jello Fat Free Sugar Free Vanilla Pudding (or cheesecake, it's what I use)
    1.5 cups skim milk
    .5 cup Sweetened Coconut Flakes (optional)

Directions

Preheat oven to 350, and spray 9x13 pan with nonstick spray.


In bowl combine cake mix and sprite zero, mix until well blended (I use my mixer on low for a couple minutes)


Bake for 25-45 minutes depending on the type of pan you used, and also the amount of sprite. When toothpick in the center comes out clean it's done.


Once cake is done, and has cooled some, poke holes in cake with a butter knife or the end of a wooden spoon. Combine milk and pudding, and spread over cake, (be sure to get it in the holes.)


Combine cool whip and coconut extract stir until blended, then add shredded coconut if desired. Spread over cake/pudding, cover and refridgerate any leftovers. This cake is better the older it gets, so the next day or even the day after it's fantastic! It also freezes well.

    I made cupcakes for a coworker's birthday, and used 4 oz of coconut water and 8 oz of sprite zero. The cupcakes are light and fluffy, and the pudding adds a nice touch! I'm not a huge coconut fan, but these were pretty good...and got rave reviews! - 5/25/11

    My store didn't have the Coconut Cake Mix, so I made it with the Pineapple one. It was sooooo good! Absolutely right...it does improve after a day in the fridge. We have enjoyed it over a couple days and froze the rest. My boyfriend can't stand Cool Whip and he loves it! - 7/9/08

    So good. Used white cake mix with pudding in it and store brand diet soda. Didn't have ff st pudding, so I halved what I had on hand - banana pudding mix (1.8oz), mixed with 1c of skim milk. Only used 1/4 c coconut. Will try it with the coconut water next time. - 12/29/14

    Loved this cake, very easy to bake (though I took it out of the pan immediately so that it would not continue to cook. Placed it back in pan, added the pudding and frosting, and yum started to happen!! Easy and delicious!! - 4/25/11

    I made this for my husband's birthday, and it was a big hit! My husband doesn't usually like anything low fat or 'diet', but he loved it! And I agree, it's definitely even better the next day. I couldn't find the coconut cake mix, so used white cake mix. I'll try it with pineapple or orange next - 3/3/10

    This cake is absolutely the best low fat cake I have ever had. Great flavor and very moist . No one knew it was low fat. I will definately make it again. - 4/15/09

    Very Good
    This cake was great, alot lighter and fluffy compared to ordinary cake. I did use chocolate cake instead of vanilla, but otherwise great. I took it to a church function and they were suprised I used soda in the cake. I am looking for other flavors to incorporate besides coconut next time. - 3/16/09

    I made this twice and could not get the pudding to go in the holes. I would appreciate any suggestions. My husband and I both love it and it does freeze very well. - 9/22/08

    What I do is just pour it on top of the cake and use a spatula to spread it, like frosting, pressing the pudding into the holes. I also use the handle end of the butter knife to get a bigger hole. Hope this helps!

    I made this with chocolate cake mix because I am such a sucker for the chocolate/cocnut mix!! It's delicious! The Sprite Zero had me a little worried, but you would never know that that is the only ingredient mixed with the cake mix! Brava for coming up with this!! - 8/10/08
