Ingredients

    3 lbs zucchini squash, sliced (unpeeled)
    2 medium onions or 1 large onion, chopped
    1 Tbsp low-fat margarine
    8 oz low-fat sharp cheddar cheese
    4 eggs, slightly beated
    salt and pepper to taste

Directions

Slice zucchini into 1/2" pieces, steam and simmer until half cooked. Saute onion in margarine. Lay zucchini in flat casserole dish, spread onion over. Mix cheese, eggs, salt and pepper; spread over squash. Bake 30 min. or until firm around edges and brown on top. Makes 9 servings. Can be a main dish for breakfast or a side dish for dinner.

    Such a great recipe to use up zucchini from my garden!! I added 1 cup milk & 2 Tbsp. flour to the egg mixture. I also added a couple jalepenos to the sauté. Delicious!! - 9/30/14

    Certainly a good healthy receipe. I did find the need to add some flavor, I love hot stuff so peppers and hot sauce were added. Good basic receipe though. I'm really enjoying. - 2/23/10

    Incredible!
    Very good. I had it for dinner and breakfast. I did put a bit of roasted garlic and red pepper - I like spicy stuff. Will make again! - 8/7/08

    Very Good
    This recipe was great. I used zucchini and eggplant but did not used onions. I browned vegetables first and then transfer them to the baking dish. Also added some hot sauce to the egg mixture. - 8/5/08

    This was a good recipe but it needed a llittle something extra. It was a little dry, so I will make it again only with a few substitutions. - 7/23/08
