Ingredients

    1/2 cup oatmeal
    1/2 cup low fat cottage cheese
    1/2 cup egg substitute
    1 tsp vanilla extract
    1 tsp cinnamon
    2 tsp sugar

Directions

Preheat griddle.
Mix all ingredients together in a blender until smooth.
Spray griddle with cooking spray.
Cook pancakes. Can also be done in a waffle iron.

    I made these today and OMG! I did use spenda instead of sugar, sugarfree syrup and Cool Whip Free as a topping with a little I Can't Believe It's Not Butter Spray. My 3 and 4 year olds were begging for more. This is an ABSOLUTE KEEPER! - 1/14/09

    Heard about cottage cheese pancakes a while ago, but this was my first attempt. Tasted just like a “real” pancake, it was very soft and tasty! I was out of Eggbeaters and only had 2 eggs left, so I used 2 egg whites and about a Tbsp of unsweetened almond milk and it was still awesome. - 3/17/12

    I made these this morning! Very yummy. I ommitted the sugar in the batter and drizzled 2 tsp of TJ maple syrup onto the pancakes instead. Also didn't have egg substitute so I used two eggs. - 9/22/10

    Very Good
    this is a great alternative to flour pancakes. a little "spongey" but not bad at all. i used Truvia instead of sugar so my calorie count was 230 for 1 serving. also, i made minis & managed to get 10 pancakes at 23 calories each...can't beat that! - 5/31/09

    These were pretty good - the only sub I made was splenda. Easy to make but a little hard to cook, to make sure they are completely done. - 10/18/08
