Introduction

Easy, quick cucumber pickles which may be used as a side dish. Easy, quick cucumber pickles which may be used as a side dish.
Number of Servings: 10

Ingredients

    3 large Cucumbers (skins on)
    3 medium onions sliced thin.
    1/4 cup salt

    2 Cups Sugar
    1 Cup white vinegar
    1/2 tsp. pepper

    Opt. Add parsley Flakes.

Directions

Cover the cucumbers, onions and salt with water and let set for 2 hours.
Drain and RINSE.

Bring to a boil:
2 cups sugar, 1 cup white vinegar and
1/2 tsp. pepper.

Pour over Cucumber & Onion mixture and refrigerate.

Eat as a side dish or serve on sandwiches.

2 cups Splenda may be substituted for the 2 cups of sugar.

    Really DELICIOUS! I grated the cucumber and onion making it into a relish. I might try adding grated cabbage, celery and red pepper next time. I will definitely make this again and again. Thanks for sharing. - 12/9/08

    These were so easy and tasted wonderful. Reminded me of an old recipe my M-I-L used to make. I used the Splenda for the sugar and they were plenty sweet. I also didn't have white vinegar on hand, so I used apple cider vinegar and still was pleased with these. Thanks Carolyn! I'll be making more soon - 7/25/08

    I consider a serving as 1/4 cup. These keep for weeks in the refrigerator.

    My first time making this it was good just like MrsShelly said and easy to do. I'll sure make again i use splenda to lower sugar but still tasted great even my husband like them! - 8/13/08

    I have made my own easy homemade pickles since my mom taught me when I was little, if you really like them to taste like real pickles leave the sugar out and don't boil them. Just slice them up and they can keep in the fridge for at least a month. They are crispier too if you don't boil them. - 7/26/08

    Melony, the recipe does not call for boiling the cucumbers and onions but boiling the sugar, vinegar and pepper before pouring it over the cucumbers and onions. Although this recipe is called a "pickle", it is more like a cucumber & onion salad.

    I love this recipe and my family does too. I got it originally from my mother the only difference is that after making it I freeze it for at least a couple of days before thawing and serving it. It'll last for a couple of months in the freezer. - 9/30/09

    I add half a teaspoon of celery seeds and one teaspoon of yellow mustard seeds for a real boost in flavour. If I use white vinegar instead of cider or malt vinegar, I add a small amount of turmeric for colour and taste. - 5/5/09

    this is delicious, but the nutrition info is off. your ingredients don't list sugar and only 1 cucumber to make 10 servings. also, 1 T salt is not same as 1/4 cup salt. i know it doesn't all get eaaten if you pour off the liquid, but some remains.
