A sweet and spicy compliment to fish or chicken. This is easy and quick to make and tastes best if it can marinate together for an hour or so before serving. Store in air tight jar. Ingredients

1 cup, sliced Mangos (1 mango may be a bit more)
1 Fresh Medium Tomato, Roma is best but any kind will do.
1 Large Jalapeno Pepper
1 tbsp Lime Juice, juice of 1 lime
2 tbsp Cilantro, Fresh
Tips
Mago salsa is a wonderful way to dress up your salad. I use grilled chicken and only need the salsa as the dressing. We all know how hard it is to eat salad without traditional dressing packed with oil but this one fills the bill! Trust me.
Directions
Soak lime in warm water to soften it up.
Peel and dice mango into small cubes.
Dice tomatoes into small cubes. Sprinkle with salt and place in colander to drain extra juice off tomato.
Finely dice the jalapeņo.
Place all ingredients into bowl. Add fresh cilantro to taste.
Cut lime in half and drizzle lime over salsa ingredients.
Serving Size: 4 1/4 to 1/3 cup servings
