Chef's note - This is a stuffed chicken recipe "a la carte". I made it stuffed with spinach and fresh mozz, but obviously you can stuff it with whatever floats your boat. I also season it with some pepper, garlic, and a special essence I concocted. You, once again, can season it with whatever you like.

Ingredients

    Chicken breast- butterfly sliced
    1 oz. olive oil
    4 oz. Orange Juice or freshly squeezed
    2 oz. lemon juice or freshly squeezed
    Spinach
    Fresh mozzerella

Directions

1. slice chicken into a butterfly
2. Season chicken
3. place spinach and mozzerella inside the chicken and close
Optional- Sometimes to keep the juices from leaving the inside i wrap the chicken in turkey bacon. I discard it later.
4. Using toothpicks, secure the edges of the chicken
5. Inside a casserole dish mix Orange Juice and Lemon Juice.
6. Place chicken inside the casserole dish
Optional- for extra flavor slice lemon or oranges and place around the chicken
7. Place inside a pre-heated oven at 375 and let cook for approximately 40-45 minutes
optional - to make the top of the chicken crispy for the last 5-8 minutes place broil on high
8. Enjoy your meal and savor each bite

    I have made this twice now. It's a hit at my house. I stuffed with lightly steamed broccoli and mozzarella. I seasoned the olive oil with thyme and brushed it on the top of the chicken after it was stuffed. I also covered it with foil while it baked and then removed the foil while I broiled it. - 5/26/09

    This is so good! I've made it twice, now. This time, I sprinkled just a few bacon crumbles on top w/a little mozzarella. If you're going to use toothpicks to hold the chicken breast closed, you may want to soak them in water for a while first. I highly recommend this recipe. - 4/10/09

    We eat a lot of chicken at my house so tried this recipe. My boyfriend absolutely LOVED this chicken. The oj kept the chicken very moist and flavorful. And the spinach and cheese was a great way to get my boys to eat their veggies =) I added Italian spices, onion powder, and garlic powder for spices - 12/31/08

    This chicken was good. A bit dry, might try CONNIEK1960's suggestions with the foil. Maybe cook it just a bit less. But other wise I really liked the aroma. - 9/1/09
