Ingredients

1/2 to 1 cup diced onion
1 - 16 oz. package frozen spinach - THAWED
Garlic to taste
8 large eggs
1/2 cup 2 % cottage cheese
2 cups cheddar cheese
Salt & Pepper to taste
Directions
Makes 8 servings (1/8 of a 9 X 13 baking dish)
Preheat oven to 350 Degrees
Saute' onion & garlic, add thawed spinach and cook until most of the moisture is gone.
Blend eggs & cottage cheese and salt & pepper to taste. Add to spinach mixture along with two cups of cheddar cheese. Mix and pour into 9 X 13 greased pan. Bake for 30 minutes until done around edges and a little moist in the center.
Can be served hot or cold. Great to reheat for a quick morning "on the go" breakfast or serve in smaller pieces for a cold appetizer.

I luv quiche avon! usually I make it with store bought crust. When I make it I saute mushrooms and onions in butter, use ff milk instead of cream, and add a bit of dried mustard and a dash of nutmeg. I am so looking forward to trying this without the crust and butter and milk. Sounds yummy! - 1/24/12

I use to make this with crust, for years, but had forgot how to. Thanks for posting this..I can again make it. One of my favorite dishes, even though I have to limit iron intake, so just eat less!! Thanks and I do add stuff..mushrooms, different kinds of cheese...bacon bits..this is awesome! - 11/1/13
