Ingredients

Appx. 2 lbs. pork loin chunks (estimated 26 oz. cooked in recipe)
3 large carrots, cut into chunks
3 large celery stalks, cut into chunks
1 large onion, chopped
4 medium sized yukon gold or red potatoes
2 cups french style frozen green beans
1 can corn
1 cup chicken broth
1 packet dry onion soup mix
Directions
Put pork loin chunks in crockpot. Pour 1 cup chicken broth and packet of onion soup mix over pork. Dissolve any remaining dry soup mix into liquid. Add any other desired seasonings (cayenne, pepper, etc.). Cover and cook on low for 3 hours. Cut carrots, celery, potatoes and onion. Add to crockpot, along with can of drained corn, and cook on high an additional 2 hours. Add frozen green beans and cook another hour on high.
The pork should be white throughout and will fall apart when shredded with a fork. Makes approximately 8 servings (about 1 1/2 cups each).

Very good recipe. You don't list potatoes in the ingredients but you say to add them in the ingredients so I ran the calculator for myself and came in a little higher in calories. A great meal for the whole family. - 9/16/08

Thanks for letting me know I forgot to list potatoes. I checked and I had put them in when I calculated the nutritional information, but forgot to list them in the ingredient section. Glad you enjoyed the recipe! Thanks again, I edited the recipe so it is accurate now.
